The dialogue makes it clear that it will take 4 days to cross the anomalous zone, and though the crew will be in induced comas to avoid brain damage, there is no mention of keeping them hydrated, nor is there any sign of related equipment, i.e. an IV system. The average human can only live for 3 days without water, thus the crew would die before they traversed the zone.
T'Pol says that it would take less than a day at warp 4 to traverse the region of altered space, and Trip estimates it would take four days at full impulse to cross it, but he's not even close. Warp factor 4 is approximately 64 times the speed of light, whereas full impulse is one fourth the speed of light, so warp 4 is 256 times the velocity of full impulse. Even if it only took 12 hours to cross the altered region at warp 4 it would take roughly 128 days to travel the same distance at full impulse.
Warp factor 2 is eight times the speed of light, at that speed it would take a little over 11 days to travel a quarter of a light-year. But the Enterprise is shown leaving the disturbance after only a vert short amount of time after going to warp. For perspective that trip would take 3.3 days at warp 3, 1.4 days at warp 4 and roughly 18 hours at warp 5.
Besides the lack of hydration, the lack of movement wasn't addressed. A person laying in the position for 24 will see the beginnings of skin breakdown. Otherwise known as decubitus ulcers or pressure sores. This is a major problem in hospitals and extended care facilities when dealing with people unable or unwilling to move. Four days would be very bad for their skin, especially at the pressure points on the back of the head, the shoulders, hips and heels of the feet.
Nothing was mentioned about elimination either. Bowels and bladder's would not stop functioning.
